Cook it fast. Venison is extremely lean, which will cause it to dry up. Cook it just a little too long, and it will dry up like leather.

It really depends on the cut. I love to have venison chuck roast, but I have to braise it for 4 hours or so. Venison steaks are dry for me even if I cook them fast, so I prefer having stews or burgers.

1lb Ground venison + 2 pieces crumbled bacon + diced onions + 1 egg + bread crumbs + olive oil = best damn bambiburger patty on the planet.

That sounds really good Josh. I have a lot of deer meat in the freezer, and I may need to try that one!

My favorite venison recipe is to take the back straps and fry them in butter, garlic and a few diced onions. Good eatin'!

If you add minced garlic, minced celery and finely chopped carrots - it also makes a darn fine meatloaf - err... bambi loaf!
