hey Gang.. I notice that when i cook meats ther is quite a bit of shrinkage. toinight for instance i grilled 1000 grams (2.2 pounds ) of chicjken breast and after cookin was left with 645 grams ( just slightly under 1.5 pounds) my question when doing my protein cand calorie counting do I count the raw weight or the cooked weight + in this senario does this chiken have about 28 g or protein per 100 grams so is thsi 280 g protein or 200 g.

Jesse - your three pounds of beef - that weight before cooking correct??

Jaime since shrinkage occurs when it is cold ... oops.. I mean when water evaporates from the surface of the meat and when fat, water and juices drip from the meat and non of those contain protein I would think that the protein content would be cooked weight. But the fat juice does contain calories so I am not sure wether the calories are before or after cooking, but I would assume after cooking, just because no one I know eats chicken before cooking so what good would the nutritional info be if it was before cooking.

So no definate answers, just thinking about it out loud, good question.

always account for shrinkage... it's the best answer when you get out of cold water...

To answer your question...The protein will remain the meat...

I weigh all my food cooked, and count the kcals from there.
