I always though it was low GI which was a main reason why it is better than white bread. But I was reading through the articles on this site, and clicked on the glycemic index, and it says that whole wheat is only 1 point under being considered high GI, and only 1 point lower than white bread. Was that just a typo, or was I just confused this whole time?

Depends on the bread, wheat is lower, and whole grain is lowest. The more grains/kernels in the bread the better. The lowest I have seen is 27 on the GI index. Coarse barley bread with kernels is best.

whole wheat is usullay just like white bread just with some coloring (ie proccessed).

Go with whole grain.

I like sprouted breads as there is no processing in them.

Also, you can get whole grain breads with milled flax seed already in it.
